This running thing isn’t so bad…

It’s been a while since I’ve posted my meals, so I’ll give you a peek of what I made the other day.  I saw Jaime had pork tenderloin from Pete’s Frootique and it got my taste buds dancing.  Thursday night I decided to make my own pork tenderloin.  I’ve had frozen cranberries in my freezer for a while and figured I could put them to use. 

Here’s what I did:

1 pork tenderloin – browned in a skillet with some pepper, Epicure spices (I used 3 onion, sansel, and a sprinkle of the steak rub)

I threw in some onions to caramelize while I browned the pork.

Once the pork was browned I tossed it into a baking dish with the onions.  Baked it at 450F for 35min.  (I like cooked onions but this can be omitted as it didn’t really add much to the meal.)

My cranberry sauce was a standard cranberry recipe: 1/2 bag cranberries, 1/2 cup sugar, 1/2 cup water and a few slices of Clementine to mix it up.

For my veg I had a bag of shelled Edamame which I personally enjoyed, but DBF did not!  He’s not a big veggie person but although he really did not like these, he was a trooper and had a few bites.

Thursday night I had a successful night at the gym and ran 4kms.   Wahoo!

2min run, 2min walk (7x)

5min cool down

It isn’t terribly amazing but it’s quite an accomplishment for me as I have never really been a runner.

Today’s gym session was much of the same, but just a little more relaxed.  I did 3.3kms and was happy with it.  I wasn’t overly tired or exerted and felt good after the run.

Today I went to Futureshop to browse their earbuds.  Gym going is so much easier for me when I have a good set of tunes to listen to but my little ear syndrome causes some issues.  Well folks, I walked out with a new purchase!! I bought some Skullcandy earbuds that actually work for my little ears!  I have to put the buds on the smallest size but hey, whatever works!  I tested them out at the gym during my run and they worked perfectly!

All in all it’s been a good weekend so far.  Dave leaves again to travel for work for a week so hopefully it flies by.  We’ve been having a lot of fun this week – which usually seems to be the case when he has to pick up and travel.  Boo!

I'm so proud of you for learning to run! What do you think of your Garmin?? 4k IS a big deal!

I've got some edamame in my freezer that is calling my name and is definitely going to be on the menu for this week. That looks delicious!

Pork tenderloin sounds/looks delicious.

I have never tried Edamame, but you have intrigued me. I'll look for it next time I'm at the store.
